With over 16 years in the hospitality industry, Ian is a seasoned expert in restaurant operations and people management. He has held key positions in renowned hotels, driving excellence and guest satisfaction.

Ian's journey began as a Quality Assistant, where he quickly advanced to Assistant Outlet Manager. He excelled as Outlet Manager and Beverage In-Charge in subsequent roles. As part of a pre-opening team, he significantly contributed as Restaurant Manager.

Later, Ian served as Area Operations Manager for a premium restaurant chain, overseeing multiple locations, and as Assistant Director of F&B in a leading hotel. In Australia, he took on roles as Assistant Venue Manager and F&B Restaurants Manager.

Since becoming a Head Chef in 1998, Matthew has honed his expertise across all areas of hospitality, including regional boutique hotels, five-star CBD hotels, wedding venues, large-scale conferencing, off-site catering, and high-volume à la carte operations.
